Breakfast Muffin Cups

Who has time for breakfast?  Everyone should.  It is a started meal to get you started.  Our schedules are super busy with work and school.  I try to find recipes that we will all enjoy.  Have you heard of meal prepping?  Meal prepping is what you do when you have a busy life.  You pre-prepare your meals.  One recipe that is quick and easy for me is muffin cups.

Muffin cups are easy to make and you can add your favorite adders.  First you will need a cupcake pan.  Today I am making Cheesy, Turkey Sausage  and Egg Muffin Cups.

Ingredients-
-6 eggs
-Johnsonville Turkey Sausage
-3 cheese slices
-coconut oil

Preheat your oven to 400 degrees.  
Oil your pan.  I used a basting brush to spread the coconut oil around each cupcake hole.  
Crack 6 eggs in a bowl.  Mix the eggs.  I hand beat the eggs.
Cube your sausage or cut any way you like.  I cut them long ways, cutting half way twice.  Then I cubed.
Add the sausage to the bowl of eggs and mix.  You can add any adders at this point.  These muffin cups are going to be for my son to grab and go on his way to school on his early mornings.  So I made them just like he likes them.
I used an old scooper from a juice container to fill these.  They seemed to be the perfect measuring cup for these cups.  I added the egg and sausage mix and stopped half way.  I added cheese, then I continued to fill.  I layered cheese squares on top.  Put the tray in the oven for 15 minutes.  Remove and let them cool off.  Then I took them out of the pan and put them in the snack size plastic bags with a note for my son.
My son will now be ready for his day.  All that mental work, crossfit, and who knows what else.  This is a protein-packed breakfast.  Good for test days.  

Did you like this recipe?  I have been making muffin cups for awhile.  When I did crossfit I was introduced to Paleo.  These are Paleo approved.  I like to add veggies to mine.  Each time I add different veggies.
